Over 100 years ago the original recipe travelled from Mei Zhou, China to India with the Hakka Chinese people who eventually settled in the village of Tangra in Calcutta. Over several generations the marriage of oriental techniques and Indian ingredients evolved into a gastronomic explosion for the taste buds.
